I found the section on commercial food production informative. I had known about the depletion of the needed minerals and natural chemicals from our soils but was unaware of what the term 'genetic modification' was. Recently I found out that Canola oil is no longer recommended as a 'good' vegetable oil because it is genetically modified. It seems like a losing battle - that fewer and fewer foods have the original beneficial qualities and that truly eating healthily not only takes a lot of time and education but is a moving target. It's enough to make many just give up.
